Aside from dashboards, there are some use cases that require a fair amount of detailed data, with customizable sort and display fields which can vary by account.
This is in the insurance, healthcare, benefits space in particular.
While advanced visualization features help on the dashboard side of the equation, I would like to get the opinion on the best tools for this detailed, customizable Excel-like supporting data that can be offered in a self-service ad hoc or high-volume production environment.

Tabular or matrix view is just a way to visualise raw data. Most popular BI visualisation tools offer both these visuals. Don't let the visuals define the requirement, let the action-driven insights drive the best visuals for a particular use case.
PowerBI and Tableau are great self-service BI data discovery and visualization tools but not the kind of reporting you describe.
I would recommend SAP BusinessObjects Web Intelligence which is widely used for this purpose by many organizations in the insurance/healthcare/benefits space.
MS Power BI has many useful "pivot" and "filter" features that are exploited by a number of third party Financal Consolidation and Reporting solutions which have chosen to develop 'data selection and export tools' rather than any unique Dashboarding and/or Graphical capabilities for themselves.

Yes, you can do that but only on Professional or Enterprise Plan.
Also, you can link to Power BI and generate some different views.
